Rice Stuffing Recipe

Ingredients

  • 1 Cup Wild Rice Blend
  • 2 ½ Cups Vegetable Broth
  • 1 Large White or Yellow Onion, Chopped
  • 2 Stalks of Celery, Chopped
  • 2 Carrots, Chopped
  • 8 Ounces of Mushrooms, Sliced
  • 2 Cloves of Garlic, Minced
  • 3 Tablespoons Tamari
  • 1 ½ Tablespoons Dried Sage
  • 2 Teaspoons Dried Thyme

Prep

Mince, chop, and slice ingredients as indicated

Steps

  1. Cook 1 cup of wild rice in the veggie broth as directed on packaging.
  2. In a separate pan, add 1 tablespoon of a neutral oil such as canola or vegetable oil. Add the large chopped onion, 2 chopped carrots, and 2 stalks of chopped celery and cook until the onion is translucent, about 5-7 minutes.
  3. Add the 8 oz of mushrooms, 2 cloves of garlic minced, 3 tablespoons of tamari, 1 1/2 tablespoons of dried sage, and 2 teaspoons of dried thyme. Cook for 10 minutes.
  4. Add the rice to the mixture and taste and season as desired.
